I’m interested in learning more about menu planning, too – and I like the idea of batch cooking, but have been a little intimidated to give it a try. Glad SB is here to help me w/ both :-)

Congratulations Betsy!

As for inspiration, I found the BEST recipe for roast chicken ever. Fool proof, delicious, delicious. I was always intimidated with ‘Roast Chicken” because in my experience, both as a chef and as a guest, it was uninteresting or dry or both. Try online Jamie Oliver’s Best Roast Chicken. It’s now a staple recipe for me; I’ve made it twice in two weeks! And it’s SIMPLE!
