Honey-Sweetened Peach Lemonade

As long as there are peaches to be had, you can be sure we’ve got a basket ripening on the counter for salads, cobblers, and juicy snacks.

They are Noah’s absolute favourite fruit, which is why it made sense to feature them in a honey-sweetened lemonade for his recent birthday party. We celebrated Noah’s ninth birthday on Sunday – which is just mind-boggling because didn’t I just make this robot cake for his seventh? And his third doesn’t seem all that long ago, come to think of it.

Perhaps I’ll post a few more photos from the party later in the week, but this recipe for peach lemonade had to be shared as soon as possible. Hopefully you haven’t moved onto apples and pumpkin just yet; there’s plenty of time for that later in the fall.

I was channeling summer for Noah’s birthday party, and fortunately the weather played along.. I know I’ve already admitted to comfort food cravings, but I felt the need for one last sunny celebration, with sticky barbecued wings, homemade old fashioned ice cream, oodles of buttered corn and salads, and of course, lemonade.

We had it all, but the peachy drink was the first to go, slurped back while we watched the kids bob for apples and race to eat a doughnut off a string. It’s a lot harder than it looks, especially since you can’t use your hands and they tend to swing around…and around.

Lemonade has always been my boy’s number 1 request for birthday sips; it’s always made from scratch and lemon’s aren’t exactly local, so it’s a special treat.

In this pretty bright orange version, a honey simple syrup is infused with sweet Ontario peaches, and then married with tart lemon zest and juice. Fruity and light, thirst-quenching and utterly delicious, this vibrant drink is the perfect finish to summer.

Noah declared it the best thing he tasted all day and admitted to downing four glasses over the afternoon. That left me feeling better about my decision to leave out the usual white sugar and swap in honey instead.

My only regret? Not making twice as much.

Honey-Sweetened Peach Lemonade

Ingredients

  • 1 1/2 cups liquid honey
  • 4 cups water
  • 6 cups chopped peaches about 8 medium
  • 4 zest of 1 lemon
  • 1 cup lemon juice about 4 large
  • 4 cups ice

    Instructions

    • Combine honey and water together in a large pot and bring to a simmer. Stir until honey is dissolved.
    • Add chopped peaches and lemon zest. Simmer on med-low for five minutes, then turn off heat.
    • Allow infusion to cool completely, then strain through a fine mesh sieve into a large pitcher or jar.
    • Stir lemon juice into the peach simple syrup; this is your lemonade concentrate. Chill until ready to serve.
    • To serve: mix peach lemonade concentrate with water to taste (I prefer mine on the lighter side). Pour into a serving pitcher or jar and top up with ice. Add a garnish of thinly sliced lemons and peaches. Serve at once.

      I have to admit that I was lucky enough to be there, and this was the BEST! Aimee did a great job on this , but just didn’t make enough!

    4. What a peachy way to toast your little man’s 9th birthday! Sorry, couldn’t resist! In all seriousness, though, this is a beautiful drink, for both little ones and grown ups. I’m holding on to summer for as long a I can, it will be sad when the peaches are long gone.

    5. Fresh peaches just say summer to me more than anything else. We ate our last summer peach with some yogurt and honey yesterday. A delicious end to summer. Though now I rather wish I had a few more to try this lemonade. My boys love lemonade but it’s a treat here as well.

      I made this lemonade and it was ABSOLUTELY delish!!! I was wondering…do you think there’s enough sugar/lemon in the concentrate to successfully can it so that I could have it all the time?!
