2Tablespoonsolive oil
2Tablespoonsfreshly squeezed lemon juiceI used Meyer lemons
1clovegarlicminced
3/4teaspoonground coriander
1/8teaspoonground cinnamon
1/2teaspoonsmoked paprika
1/2fresh jalapeno pepperseeded and very thinly sliced
1/2teaspoonkosher salt
2 1/2cupsgrated carrots
1/2cupfresh cilantro
Instructions
Whisk together the olive oil, lemon juice, garlic, coriander, cinnamon, paprika, jalepeno, and salt.
Toss the dressing with grated carrots and cilantro.
Serve at once.
Notes
This salad can be made one day in advance. Ashley recommends adding the cilantro just before serving.
