I was always intimidated with 'Roast Chicken" because in my experience, both as a chef and as a guest, it was uninteresting or dry or both. Try online Jamie Oliver's Best Roast Chicken. It's now a staple recipe for me; I've made it twice in two weeks! And it's SIMPLE! Congratulations Betsy!
