Super Bowl Appetizers – Chicken Skewers with Roasted Red Pepper Dip

Super Bowl Sunday is coming up and if you are like me, you will have a house full of game loving folks to feed and entertain. Actually, if you are like me, you’ll welcome the opportunity to chill out in the kitchen with the non-football game watchers and munch on the goodies over good conversation versus the Super Bowl excitement, but that’s besides the point.
Super Bowl Sunday is a day to fill your buffet up with finger foods, appetizers and desserts galore. I know everyone is gathered together for the game, but it is really the food that matters, right?
As part of my attempt to please everyone, one of my favorite things to serve at our Super Bowl party is Chicken Skewers with a variety of dips. Sweet dips, sour dips, spicy dips, mild dips… with enough dips set out for your chicken skewers, you will hopefully be able to have something served that will please every palate at your party.

Store bought dips are fine. If you are looking for some variety, a good barbecue or ranch dipping sauce from the store can be good filler, but why not take this opportunity to get creative and try out some new recipes? Dips are easy to make and fun to experiment with as the flavor possibilities for a good dip are endless.
This Roasted Red Pepper Dip starts with the base of ranch dressing (bottled or homemade), but is kicked up with some special seasonings and roasted red peppers. Skewer and grill or roast some cubes of chicken breasts, place the skewered chicken into a crockpot on warm to maintain heat during the game, and set out a variety of dipping sauces.
With all this great food, you’ll score a touchdown with your guests, claiming victory for a successful Super Bowl party!
Roasted Red Pepper Dip
Ingredients
- 6 ounces Ranch dressing
- 1/2 cup roasted red peppers
- 1 Tablespoon minced garlic
- 1/2 teaspoon seasoning salt
- 1/2 teaspoon black pepper
Instructions
- In a food processor or blender, combine the Ranch dressing, roasted red peppers, minced garlic, seasoning salt and black pepper. Blend until smooth.
- Chill until ready to serve.

Looks great! I won’t be throwing a Super Bowl party, but I’d definitely make this dip when having friends over. I bet it would also be great in a chicken or turkey wrap with some lettuce and avocado. Yum!

Yum! We don’t do the Superbowl thing but who needs an excuse to make a dip like this! My go to dip for potluck type events is a fruit dip : 1-8oz pkg cream cheese + 1 small jar marshmallow fluff — Bring all ingredients to room temp, mix well {takes awhile} and refridgerate an hour or two before serving. Serve with strawberries, pineapple, kiwi or any fruit really.

You hit it right on when you said that it is the game food that matters. I’m not into football at all, and thankfully Eric isn’t your typical obsessed guy either – but we sure love snack food! Guacamole and chips will always be a favorite, but I love the idea of chicken skewers and dip!

I’m one of those girls who loves the food AND the football at the Super Bowl – and you’re so right, dips and easy finger foods are the way to go when you have lots of dudes and kids crawling all over your couch, shouting and yelling at the TV. I’m gonna steal this one for year-round dipping.
That sounds yummy! My favorite go to dip (errr, more like a spread) is Pesto Cream Cheese dip. Can’t wait to eat Superbowl food!
