so smart to assemble like patchwork! whole wheat dough is just too dry to make one big sheet- but I promised myself I'd never give up- whole wheat flour is not only better for you but I've always thought it tastes better too- love the nutty texture and flavor- AND it's more filling- thanks for sharing!!

I'm going to say that it would work just fine! The dough is a traditional dough, just with whole wheat flour. It's quite sturdy so it should hold up to the juicy pie!

Baking this pie as I type! Just wondering if this recipe would work with the crust applied more traditionally. Ie. cover the pie dish with the dough and the layer some pieces on top. I would probably double the dough recipe, but I wasn't sure if it would turn out since the filling is quite juicy. Any thoughts?

Made this exactly as you said, except I used blueberries instead of strawberries. First off, the filling was delicious, full of flavour and depth. Secondly, the nutty sweet whole wheat crust perfectly complemented the lemony tartness of the filling. Thirdly, I HATE making pastry, but this wasn't bad!

I served it to guests, and we almost ate the whole pie in one sitting. Thank you.

Elizabeth, that pie looks fabulous! I usually avoid the top crust altogether since I don't like to monkey with the folding and pinching, but your patchwork crust looks easy and sooo creative! I wan to try it next time. Thx for the inspiration, and I'm gonna pop over to your blog now!

WOMAN - DID YOU READ MY MIND? I was just looking for a new pie recipe to use the rhubarb I was just given but I wasn't seeing one that I liked. Then - poof! Here you are to save the day, yet again with a recipe that looks like will leave me looking like a kitchen goddess once more. Thank you!
