Creamy Black Bean and Corn Salsa

  • 1 can black beans, rinsed and drained and cooked according to label directions
  • 1 cup sweet corn kernels, cooked
  • 2 strips bacon, cooked and crumbled
  • 2 tablespoons chopped fresh red bell pepper
  • 3 tablespoons mayonnaise
  • 1 teaspoon sugar
  • 1 teaspoon finely chopped onion
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon olive oil
  • 1/4 teaspoon Kosher Salt
  1. Combine all ingredients in a large bowl. Serve with pita or corn tortilla chips.
  2. Salsa may be served warm or may be stored in the refrigerator and served chilled.
