Breakfast on the Go (Recipe: Cottage Cheese & Yogurt Parfait)
Sometimes no matter how hard we try, our mornings get rushed and we don’t have time to sit down for breakfast. If you have a teenager you probably have difficulty getting them out of bed in the morning, which usually means breakfast is scarfed down at the last minute, or skipped completely.
Your kids can still enjoy a healthy breakfast while riding on the bus or once they get to their destination. If you have something to hand them on their way out the door, you can be at ease knowing they’ll have a healthy start to their day.
On the Go Breakfast Ideas
- granola bars
- ham, eggs and cheese layered on scones, toast or bagels to make a sandwich
- yogurt parfaits in plastic cups
- muffins and quick breads
- breakfast burritos (scrambled eggs, meat/beans, veggies and cheese wrapped in a tortilla)
- smoothies
- breakfast pizzas (english muffins topped with ham, pineapple and cheese)
- bagel with cream cheese and jam
- breakfast panini (ie: bacon and cheese)
- sweet breakfast wraps (banana, peanut butter and honey wrapped in a tortilla /or cream cheese and fresh slices of fruit)
- peanut butter and jelly sandwich with slices of banana
- fruit
- scrambled eggs stuffed in a pita with toppings of choice
- fruit and nut muesli in a plastic cup or mason jar
Anything that can be packaged up and travel well will make a good take-away breakfast. Be creative. Think of your favourite lunchbox meals and find ways to make them suitable for breakfast. Or, try to make your favourite breakfast eats more hand-held friendly. The sky’s the limit. Go forth and eat breakfast!
Recipe: Cottage Cheese & Yogurt Parfait
This is a great take-along breakfast because you can seal it up tight in a jar to eat at your leisure when the time is right. I used frozen blueberries and bananas for my parfait.
- 1 cup fruit, fresh or frozen (thawed)
- 1 tablespoon maple syrup
- 2 cups cottage cheese
- 1 cup vanilla yogurt
- 1 cup granola
- Toss fruit and maple syrup to coat. Set aside.
- Mix together the cottage cheese and yogurt. Divide between four mason jars with lids (or large plastic cups).
- Top evenly with fruit mixture. (Make sure to include all the yummy juices that have collected at the bottom of the bowl.)
- Sprinkle with granola. Serve immediately or store in the fridge until ready to go (keeping in mind the granola will soften as it sits).
Serves: 4-6 (depending on age and appetite)

Whenever I make pancakes or waffles I make extra and freeze them because popping the frozen ones in the toaster makes a quick breakfast when I’m in a rush. Pumpkin waffles are so moist and flavorful that you don’t need anything to go with them, so they’re even great for taking in the car. For pancakes, you can make a little sandwich with peanut butter and jelly – or any other fillings you like!

Ah! I love that idea! Can’t go wrong with apples and cheese.
I’ll second the vote for toaster pancakes! I also like to grab a little container of dry cereal with milk in a thermal cup. It’s like eating milk and cereal, but without the mess. 🙂 And when I remember, I cut up apple slices and send them along with a big of peanut butter.

Great idea to serve stuff in thermal cups! Who says it has to be limited to soup lunch and beverages.
I never skip breakfast. It is a must. I always have oatmeal during the week and sometimes on the weekend I splurge with regular cereal, waffles, fritatta, smoothies, parfaits, etc. Love your parfait here!

This list (and the other comment ideas – pumpkin waffles!) are fantastic! In the picky eaters series, someone suggested packing nutrition into the meals your kids most readily eat, so I’ve been trying to enhance our breakfast fare. I will be printing this list!
Buttered toast, mostly. And a giant thermal mug of coffee, of course.
But usually we’re not rushing out the door, so it’s homemade granola—the kids munch while I read to them their Bible, history, and science.
When it comes to breakfast, I am SUPER well prepared. I make a big batch of (DELICIOUS) turkey apple sausage on the weekend, and heat them up in the toaster oven. No microwaves allowed 🙂

I am the Queen of “grab and go” breakfasts, but mine is almost always the same thing every day- yogurt and fruit with granola sprinkled over the top. And it’s not even in a cute jar like yours. I hadn’t thought of adding cottage cheese to the yogurt, but that would add some protein- I’m definitely trying that. I’ll also take a closer look at your list and maybe surprise myself with something new one morning. Thanks for the great ideas! 🙂
Breakfast is always a rush for us, trying to get out the door to school and such. I have a few things I rely upon, such as making steel-cut oats in my crockpot overnight so it’s ready in the morning (mmmm). I also use a homemade pancake mix from Nigella Lawson and I mix things into it as needed—such as blueberries, pumpkin puree and spices, and peanut butter (topped with jam). Lastly, I rely heavily on smoothies—we all love them!

Yogurt is the ONE dairy item that I miss! I\’ve had to avoid dairy for about 4 years now & I keep trying different brands but none of them work for me. This looks so delicious! Tina
