Frozen Bites Part 2: More Easy Summer Treats

This summer marks the fourth year in a house without air conditioning. We survive the 90- and sometimes even 100-degree heat year after year by living in tank tops and flip-flops. I also open the windows and blow hot air around, trying to create a breeze. Finally, I stock my freezer full of cool treats that will air condition my family from the inside out.

Having survived a late July due date with my fourth child in these weather conditions, I’d say I know a thing or two about midsummer frozen fare. I start with the obvious: popsicles and ice cubes, both perfect for plopping into water that can’t get cold enough or running across your skin, and then I move on to things like frozen fruit for daily smoothies and ice cream treats aplenty.

Stocking Your Pantry for Success

One of the very first keys to successfully eating as a family and cooking meals on a regular basis is having a good base to start from in your pantry. Having food on hand and available makes this process less stressful and much less work.

Can you imagine if you had to purchase every spice and herb and tablespoon of ingredient in each and every recipe you make every time you make it? The task of shopping just to make one meal could feel a bit overwhelming, much less trying to plan a week’s worth of meals. This is just one reason why having a well-stocked pantry is so important.

Balanced Meals for Kids: Not Until You Eat Your Vegetables

A balanced diet is important for everyone when it comes to your personal health, but it can be doubly important in children. What your child is eating now is laying the foundation for later in life, and your behavior and attitude about food is making an impression on them every time you sit down at the dinner table.

Beyond offering up balanced meals and healthy options at mealtime, sometimes it can be difficult to get your child to actually eat them. Sure, you may be serving them up, but if they’re discarding or eating just a bite or two of their vegetables every meal in favor of the beef stroganoff or the turkey and cheese sandwich, their diet is still lacking.

If your kids are anything like mine, threatening them with the old “you can’t do that until you eat your vegetables” is only going to make them more stubborn about not eating their vegetables.
