All About Avocados

Happy first day of May! My favourite picnic weather is finally here; no bugs, a cool breeze and an abundance of spring wildflowers.

I ‘m planning a picnic for Mother’s Day, but every spare minute before then will be spent in the garden. The children and I have been planting the very first crops – lettuce, peas, carrots, and beets – and the seedlings have to move into their permanent home soon.

We’re currently loving avocado diced, mixed with mango and topping these Tangy Quinoa Spring Salad Cups.

  1. Saw the link to your blog on Ree’s post! Low and behold, AVOCADO’S, I live in Ventura, CA and we are Avocado growers! My kids favorite ways to eat avocado’s when little was bread battered and fried with Ranch dressing! That’s right, Avocado French Fries! We first tried this while helping at our county fair. The tempura food truck traded me for Avocado’s and to thank me, he dipped and fried the slices that I took back to our barn and all the kids loved them! I will be going on the look out for your cook book!
