12 Meatless Mains: a round-up of favorite vegetarian dinners
We don’t religiously subscribe to the Meatless Monday movement, but more often than not, I find myself on a Monday afternoon staring into the nearly empty fridge and wondering if I could get away with eggs for dinner. My meal planning tends to begin on Tuesday and finish with a big Sunday dinner, so Monday is the perfect time for something vegetarian as I usually have plenty of produce on hand to play with.
Around the table, we hardly differentiate between meatless meals and the protein-heavy meat + potatoes fare. My boys love beans and lentils, and this is the perfect time of year for simmering a pot of either legume and serving them over rice. When I’m in a vegetarian rut, Pam’s excellent cookbook, Cook without a Book: Meatless Meals, helps me inject something new into our repertoire.
We’re currently on Mexico’s West coast, hanging out with my adored siblings and a small pack of cousins to Noah, Mateo and Clara, so I hope you’ll forgive a round-up post today. I actually surprised myself with all the vegetarian main dishes I’ve accumulated on this little corner of the web, so if it was an eye opener for me, I’m sure you could use a little review as well.

I’m so happy you posted this! I’ve been trying to incorporate more meatless meals into our menu, and these are some fantastic ideas. On the cabbage rolls, what would you recommend to substitute for the ground beef to make them meatless? Thanks!
I like to make pizzas without meat, but I usually don’t set out to make a meatless meal–I set out to use a vegetable from the CSA farm share and realize I’ve not included meat in the dish.

Do you think lentils would work to replace the beef in the Slow-cooker Cabbage Rolls recipe? If so, would you just use cooked lentils, or should I season them differently?

Oh my gosh, I’m SO glad that you posted this!! Although we’re not vegetarians we only cook vegetarian at home (it’s cheaper and we live in the middle east where delicious cooked meat is available just a few steps outside my door when I want it!), so I really needed some new inspiration. I’m particularly looking forward to trying the shepherd’s pie which I’d been pondering trying for a while now!
